Spanish (or was it Welsh) rarebit (rabbit?)

When I was in a previous life, I was lucky enough to have a cook who cooked all of my meals.

One such meal was 'Spanish (or Welsh) rarebit (or rabbit?). It was a simple meal and if I remember correctly it was toast covered with spinach and cheese and a poached egg and some kind of sauce. It was delicious. However, I am having difficulty trying to get the wife to understand what I mean as I am a little unsure myself. Anyone know?

Another great sausage!!

650 Grams of pure 100% pork/beef

175 Grams Hard back pork fat (beef fat is too lean)

10 Rashers Smoked bacon, cut into strips

1/2 Teaspoon Nutmeg

1/2 Teaspoon Mace

25 Gram White breadcrumbs, soaked in 8 tbsp hot water (1 oz)

Sausage skins

*Again these will be hand made next Sunday and then flash frozen in 1 kilo bags if you want to place an order. This sausage is available in both pork and beef (I would say that the beef is a better choice for the Cumberland)
